When my daughter came up for Christmas, she brought with her about 8 12 packs of pop, which we dont really drink. Once in a while, they are a treat. So they sit in my house.
I found an old recipe for root beer jelly, and today made 12 1/2 pint jars of the stuff. IF it is liked, I might make more as I hate to just toss it out. This will be used as a treat as it is so filled with sugar. I actually did 4 jars of rootbeer, 4 jars of strawberry pop and 4 jars of coke.
The recipe is quite simple,
1 cup rootbeer (or your choice)
3 cups sugar
1/2 cup of water
Bring to a boil
Add 3 oz of pectin
Return to boil and cook for 30 seconds
Place in 1/2 pint hot jars and water bath seal for 5-7 minutes
Place jars to set for 8 hours before moving.
