My canned Tomatoes, Tomatoe Sauce and Tomatoe Juice
Home canned peaches...
I love canning. I love the work behind each piece of food that I prepare for my family. I adore the sound of water boiling to seal fruit, or the pressure cooker for other foods. The jars with their colors lining shelves (okay now it is counter tops until I can shuffle my pantry around)
DH dropped by a local fruit market and picked up 2 cases of peaches and 2 cases of tomatoes. Yesterday I put them all up. I now have 7 quarts of peaches done in a light syrup in the freezer and an addition 12 quarts in jars. On top of this, I have 6 quarts of frozen tomatoes, another 18 jars of tomatoes, 6 jars of tomatoe sauce and 2 jars of tomatoe juice (I can use this for cooking).
I want to run back to the market (maybe later today) and get some more, maybe a case of plums and more tomatoes (I use a lot and it looks like my garden is not going to ripen fully before fall.
As I pray for good weather to redden the tomatoes on the vine, I am scouring books and the internet looking for "interesting" ideas for canning green tomatoes :).
The kids working on their computers as I can.

I am still learning. All I have done is from reading, reading and reading more...and the grace of a 22 qt canner given to me by my mom.
